Our daughter loves cookies; so, about a week ago, I dragged Kevin around to every bakery in Williamsburg hoping to find the perfect cookies to serve at the wedding reception. I was quite uninspired. So, I turned to my tried and true "source of all knowledge" - the Internet. There are thousands of fabulous cookies recipes on the web.
It is going to be difficult deciding which recipes to use. For the sake of menu planning, my kitchen has become a taste testing lab. My first test cookie - Red Velvet Sandwich Cookies (found on the Bakerella site).
I love these cookies - they were really easy to make and they fit the wedding color scheme (red).
The first batch I used rounded table spoons. Each batch would only make 12 sandwich cookies. The cookies were good but quite large and I want guests to feel like they can eat more than one cookie.
So, on the next batch, I cut the size in half - a 1/2 tablespoon rounded - and cut the baking time by a minute.
I ended up with more, perfectly sized, cookies. I think these are probably going to make the "cookie menu cut."
